Oh my gosh I love these! Classics! I went berserk and got like 20 packs of soft silken tofu. Now I have soooo many recipes for them. I am on a tofu kick now, I want to try the tofish! I have a block of firm tofu that is calling out to be made into something fabulous.

Oooh fantastic! Enough to experiment with - and don’t forget you can leave some marinating in jars! Silken is its own thing though - good for scramble, cakes, and the recipes in my newsletter!

I love the frosting recipe, it sounds amazing. But silken tofu in cakes? Do tell! There was an entemann’s blackout cake recipe with chocolate cake, 3 or four layers… filled with chocolate pudding, ganache on the sides and a layer of cake, crumbled and pressed into the ganache frosting. I bet chocolate silken tofu mousse and chocolate ganache would be fabulous but I have never seen tofu used in a cake. The Blackout Cake has been the subject of legend and numerous tries, as everyone who ever baked one for Entemann’s is now, apparently, no longer around to spill the beans on the true recipe.

I made a tofu scramble last night and it was a huge hit! My husband is a meat eater but he's always a good sport about trying my stuff and he commented, "This is really close to scrambled eggs!"
