I love lentils! Cheap, easy to cook (don't require soaking like beans do), and packed with nutrition. I often sub brown lentils for recipes that require ground beef (like in "meatloaf", or pasta sauce, or when making cottage pie etc). It comes from my days of being vegan before vegan UPF substitutes were available. I generally avoid them now because they're not good for you and expensive, so lentils still come in clutch!
True - lentils, beans, mushrooms, walnuts, jackfruit, there are some great meat replacements. We've tried to move away from the ready-made stuff, but there's a time and a place for it. One of my issues, apart from the whole UPF thing, is that a lot of the brands are ultimately owned by evil mega corps, who are heavily involved in mass slaughter, animal testing etc etc.
There's definitely time and place for the meat substitutes. I'd say they're super handy when first transitioning, when you want something familiar, and also when going to someone else's house. If someone goes out of their way to buy me a vegan burger, I'm super appreciative!
